Oolong Teas are fermented longer than green teas but not as long as black teas giving them unique flavours and properties. Also known as Black Dragon Tea or "Dark Green Tea" in Chinese.
Shui Xian Oolong is a dark oolong grown in Fujian Province, China. Grown among the mineral-rich cliffs of the Wuyi Mountain wilderness area, Shui Xian is a heavily roasted, dark-style oolong with a smoky aroma, distinct caramel and mineral undertones that mellow into lightly sweet and floral notes.
The ideal brewing temperature is 90-95ºC, which is just below the boiling point. You can just boil the water using a simple stove-top kettle and then let it cool for 30 seconds.
